Baladi — meaning "my country" in Arabic — is Egypt's most beloved everyday bread. A high-hydration sourdough flatbread, it has been baked in clay ovens across Egypt for generations, served at every table, at every meal.

Sphinx Delights was founded to bring that tradition to the Pacific Northwest. We make baladi the right way: with a live sourdough levain, high-gluten flour, and a long fermentation that develops depth of flavor the industrial process simply cannot replicate.

Why Our Bread Tastes Different

Most commercial bread is made with manufactured yeast — a fast-acting ingredient designed to cut fermentation time from days to hours. The result is bread that rises quickly but lacks depth.

We use only a live sourdough levain — a naturally fermented starter culture that we maintain in-house. Levain fermentation is slower and more complex. It produces lactic and acetic acids that give the bread a subtle, pleasant tang. That slight tanginess is not a flaw — it is the signature of real fermentation.
